1 jar imported high quality tuna or chopped up fresh tuna
4-5 fresh or grilled artichokes kept in oil
Handful of fresh tarragon or 2T dried
Salt and pepper to taste
1) Puree one or 2 of the artichoke hearts in the blender with some olive oil.
2) Roughly chop the fresh tarragon and set aside in a moist paper towel.
3) Roughly chop the artichokes and mix with the tuna and the tarragon.
4) Add the pureed artichoke and blend all the ingredients well adding more olive oil if needed.
4) Adjust seasonings and serve on top of mixed greens, in a sandwich or as a dip.
