Limey Mint Vinaigrette / Marinade

1 handful fresh mint leaves
2 T lime juice
1T lemon juice
2T lime zest
1 small shallot, roughly chopped
1 t Dijon mustard
1/2 t maple syrup

Place all in a blender and blend away.

Take boneless chicken breasts and marinate in the dressing. Sear in hot pan or on the grill, slice and serve over mixed greens or wilted spinach.
