Fennel Tops Dressing

Tops of one fennel, roughly chopped
Bunch parsley, ripped into pieces ( or herbs of choice)
1 lime, juiced
1/2 red onion, roughly chopped
Big pinch toasted garlic (or roasted or raw)
Splash nama shoyu or soy sauce
splash agave nectar or maple syrup
2-3 cups olive oil
¼ C water to thin (optional)
s & p to taste

Place all of the ingredients into a blender except the olive oil.
Turn the blender on and slowly drizzle the oil in.
Add more oil for a thinner dressing…
Salt and pepper to taste
